Abstract

The paper presents a comparative study of the antioxidant activity of 10 types of the juices of black and red currants, raspberries and bramble, cherry and sweet cherry, bilberry and blueberry, black chokeberry and strawberry. The fluorescence intensity of fluorescein was determined from the logarithm of the concentration of juice. On their Basis IC50 indicators were graphically estimated as 1,95–13,2∙10-2 %. All the juices studied show a high antioxidant activity, restoring the fluorescein fluorescence intensity to 51–78 %.
