Antioxidant activity of colostrum hydrolysates and their complexes with β- and γ-cyclodextrins

The antioxidant activity (AOA) of 10 samples was studied: dry colostrum, its hydrolysates with a degree of hydrolysis of 1 and 5 %, ultrafiltrates of hydrolysates obtained using filters with a separation capacity of 10 and 5 kDa, clathrates of β- and γ-cyclodextrins with peptides, as well as β- and γ-cyclodextrins. The main AOA parameters were determined from the dependences of fluorescein fluorescence intensity on the logarithm of the concentration of all samples. IC₅₀ values were in the range of 4.0–56.9 μg/ml. The samples restored fluorescein fluorescence to 74–96 % at their concentration of 0.15–0.3 mg/ml. The degree of hydrolysis and subsequent ultrafiltration, as well as complexation with cyclodextrins, influenced the increase in antioxidant activity. The maximum antioxidant activity was obtained for a sample of colostrum hydrolysate ultrafiltrate in complex with γ-cyclodextrin.
